Aromas of lemon grass, crème fraiche, plantain and hints of oak. On the palate there is a nice crisp attack with a long mouthfeel and a persistent finish. Very savory – the wine cries out for appropriate cuisine.

Wine Profile
Tasting Notes
Aromas of lemon grass, crème fraiche, plantain and hints of oak.
Vineyard Notes
Happy Canyon Vineyard 54% / Grassini Vineyard 46%. Happy Canyon Vineyard and Grassini Family Vineyard are comprised of ancient upland soils, primarily clay loam, riddled with cobbles of chert and serpentine. These deposits were swept down the canyon over thousands of years then uplifted and weathered for thousands more. The result is shallow, low-nutrient topsoil. In this environment, the vines are stressed for nutrients and water. Root growth goes deep into the soil and vine vigor is limited, ensuring smaller vines and low yields, a perfect combination for growing intensely flavored grapes.
Production Notes
Crushed, allowed two hours skin contact, pressed, cold settled for 3 days and then fermented cold to preserve fruit, aromas, and natural CO2. Performed battonage to richen the wine and give texture to the palate. Aged 6 months in 60% neutral French oak barrels and 40% in stainless steel barrels.
Winemaker Notes
Hand picked on cold mornings between August 8 – August 13 at brix between 21 and 22.6.
Food Pairing Notes
This wine pairs well with seafood – especially shellfish. As it ages and richens it can be prepared with grilled fish accompanied by flavorful sauces.
