Food Pairing Notes
Spicy foods and sauces pair nicely. Think Bolognese and pasta! We even love broccoli with red pepper flakes.
Punched down three times daily. The wine was pressed slightly sweet with secondary fermentation allowed to complete in barrel. We blended it several times to get the balance just right with the Sangiovese. Like a true Super Tuscan from Italy, Cabernet Sauvignon was blended for strength, color and tannin. Then we added some Merlot to complete the wine.
