2012 was an exceptional vintage for Sangiovese and Bordeaux varietals. There were levels of fruit maturity with low sugars never seen before resulting in lighter style wines with lower alcohol and deep flavors.
Sangiovese: Three Creek Vineyard in Happy Canyon, Oak Savanna Vineyard in Foxen Canyon, and Stolpman Vineyard in Ballard Canyon
Cabernet Sauvignon: Happy Canyon Vineyard
Punched down three times daily. The wine was pressed slightly sweet with secondary fermentation allowed to complete in barrel. We blended it three different times to get the balance just right with the Sangiovese. Like a true Super Tuscan from Italy, Cabernet Sauvignon was blended for strength, color and tannin. Then we added a touch of Malbec for earthiness, spice and it’s dark ruby color to complete the wine.
