Tasting Notes
Light, bright and ruby red with crimsoned hues. Aromas of spice, red peppercorns, rare roast beef, cola and sweet red fruit preserves. On the palate there are combinations of luscious soft fruits, complex exotic spices and savory rich fruits with soft tannins and a nice bright acidity.
Vineyard Notes
Early bud break in February lead to a fast start. Combine with dry, warm conditions fruit ripened early and quickly yielding low brix, balanced fruit. The grapes were harvested September 9th
Production Notes
Co-fermentation, while time consuming and requiring extraordinary attention during a busy harvest, nevertheless produces awesome consequences. The resulting wine has complex long tannins and a bouquet of aromas. The grape skins almost work as sponges taking back shorter harsher tannins. By adding additional varietals during an already proceeding fermentation the maceration is continued.
Food Pairing Notes
For cool nights we suggest pairing this wine with braises and stews – nothing works better than cassoulet. For spring we think about classic grilled meats and vegetables cooked over wood, wild salmon, seared Ahi tuna, and any cheese you can think of. Lamb chops, mushrooms, Asian foods, and duck are always winners with this wine. Basically… you can’t go wrong with this versatile wine.
